Paleo Muesli Bar

PALEO HOT CROSS BUNS!

A super nutritious paleo muesli bar for the kid’s lunchbox and a great snack to keep in store.

PALEO MUESLIE BAR INGREDIENTS:

  • 2.5 cups of shredded coconut
  • 1 cup of pepitas
  • 1 cup of cashews
  • 1/2 cup of sesame seeds
  • 1/2 cup almonds
  • 1/2 cup sultanas
  • 12 medjool dates
  • 1/2 cup coconut oil
  • 1 tbs cinnamon
  • pinch of salt

METHOD.

  1. Toast all of the ingredients (except dates and oil) in a baking tray until golden brown. This will take approx 10 minutes. You will have to continue to stir to toast all sides and ensure it doesn’t burn.
  2. Place all ingredients into a food processor (including oil and dates) until combined.
  3. Line a baking dish or tin with baking paper.
  4. Add the mixture to the tin and press down very firmly using whole hand.
  5. Place in freezer until firm and then slice into bars (I like bite sized bits).
  6. Keep in the fridge and enjoy

I prefer adding dried apricots or figs to this recipe instead of sultanas, but today sultanas was all I had. What is your favourite dried fruit?
