A super nutritious paleo muesli bar for the kid’s lunchbox and a great snack to keep in store.
PALEO MUESLIE BAR INGREDIENTS:
- 2.5 cups of shredded coconut
- 1 cup of pepitas
- 1 cup of cashews
- 1/2 cup of sesame seeds
- 1/2 cup almonds
- 1/2 cup sultanas
- 12 medjool dates
- 1/2 cup coconut oil
- 1 tbs cinnamon
- pinch of salt
METHOD.
- Toast all of the ingredients (except dates and oil) in a baking tray until golden brown. This will take approx 10 minutes. You will have to continue to stir to toast all sides and ensure it doesn’t burn.
- Place all ingredients into a food processor (including oil and dates) until combined.
- Line a baking dish or tin with baking paper.
- Add the mixture to the tin and press down very firmly using whole hand.
- Place in freezer until firm and then slice into bars (I like bite sized bits).
- Keep in the fridge and enjoy
